Leftover Breakfast
I have said this before but during the week, I usually stick with the same quick and easy breakfasts. I will take whatever leftover roasted veggies or protein and mix them with eggs. This also makes for a hearty meal, I like the do a bigger breakfast since I eat so early and I really don't eat a huge lunch at work.
This takes about 10 minutes or less to make, its great! Just chopped up the roasted brussel sprouts and broccoli. I scrambled some egg mixed the ingredients in, cook up and dump some hot sauce. Good to go!
