Easy Acorn Squash Side
This is a new favorite Tyler and I made this weekend. It is the perfect winter side and only takes a few minutes to put together!
WHAT YOU NEED:
1 acorn squash
Herbs of your choice (we used thyme and rosemary)
1/4 cup parmesan cheese
salt & pepper
Avocado Oil or Olive Oil
DO:
Cut acorn squash in half and scoop out all seeds. Cut into slices about an inch thick, toss with all ingredients and bake in an oven at 350. Bake for about 10 min (check on the color), flip and bake for another 10-15 min. Then enjoy!
