Easy Monday Night Dinner

MONDAY NIGHT MEAL

Salmon is one of our favorite foods to make, both of us growing up on the West Coast we have been eating salmon forever. It is such an easy fish to cook, in so many ways. One of our go to meals during the week is just simple sautéed salmon, a veggie and usually rice or cauliflower rice!

One of our new secrets during the winter, is getting frozen salmon filets. We got a big bag of them in the frozen section at Whole Foods. We also had great luck at Target, we just like the Whole Foods one because there are twice as many Filets in each bag.

NEED:

  • 2 Salmon Filets

  • Salt & Pepper

  • Olive Oil or Avocado Oil

  • White/Brown/Cauliflower Rice (whichever you prefer)

  • Asparagus

TO DO:

Pat salmon filets dry, season both sides with salt & pepper.

Heat about a tablespoon of oil on medium heat. While oil is heating trip asparagus, toss in oil, salt and pepper. Broil under high, for about 10 minutes checking on it periodically. Place salmon skin down, letting skin crisp up about 5 minutes depending on thickness of fillet. Flip salmon and sauté until cooked through. We usually have cooked rice ready to go but if not cook rice before starting any of the steps since this is the most time consuming.

Once all finished, plate and enjoy!
