Lazy Weekday Frittata
As some of you may know Sunday’s are our meal prep day. We spend majority of the day cooking and it is actually one of our favorite days. We are very busy during the week and really only see each other for a few hours at the end of the day. So Sunday’s are fun to be able to just listen to music and cook good food together.
This all being said, we are human and very busy, and on rare occasions are we given the opportunity to just relax. This Frittata is a perfect recipe to make on days like this. It is so easy and very satisfying! We love this recipe because you can really open your fridge and add whatever you have.
Let us know what your favorite Whole 30 frittata flavors are! This one is just a simple mushroom, onion and apple sausage frittata.
NEED:
Eggs
1 Cup diced Mushrooms (whatever you have or prefer.)
1 white onion
1 link of Whole 30 Apple Sausage (We use Aidells)
Salt & Pepper
Nutritional Yeast
TO DO:
Dice mushrooms to about bite size pieces. Heat about 1 tablespoon avocado oil in pan, add diced onion, season with salt & pepper and lower to medium low heat.
Caramelize onions, about 15 minutes. Once onions are soft add mushrooms and diced sausage. Cook until all combined.
Pre-heat oven to 375
Whisk about 6 eggs and 2 tablespoons of nutritional yeast. You can add more if you want more of the cheesy flavor. Add eggs to mushroom mixture, heat over medium/low heat until sides begin to rise and pull from side.
Place skillet in oven for about 10-15 until cooked through, let cool and then dig in! I like to top with avocado and of course Franks Red Hot Sauce!
