Easy Purple Potato Quiche

This recipe is so simple and easy. Not to mention it looks really pretty and like you spent all morning making it! You can really put whatever you like into the mix, I usually just keep it simple and light.

Need:

5-6 purple potatoes (depending on size)

Avocado Oil or Olive Oil

1 small onion

6-8 Eggs

Tomatoes

Arugula, spinach and Kale

Salt & Pepper

To Do:

If you do not have a Mandoline we highly recommend getting one. You can get an easy handheld one from target or amazon. It just makes thin slicing really easy!

First slice purple potatoes at the medium/small setting. You want to get enough to coat the bottom of an 8inch pie pan. Toss the potato slices in Avocado oil, salt and pepper. Then coat the pan with a light layer of avocado oil. Layer the potatoes on the bottom of the pan and up the sides, creating a potato crust!

Next saute onions with oil, salt and pepper. Once Onions are translucent add greens to soften. While the greens are softening whisk eggs till combine. Layer greens and onions on the potatoes and pour over eggs. Season with salt & pepper, then top with sliced tomatoes. Bake in oven at 350 for 15/20 min. ENJOY!
