Breakfast and Lunch
I get up at 3:30/4:00am every day, I love my mornings and I get the most done during this time. That being said I usually spend the least amount of time making a breakfast. This is why we like to have ready to heat up or eat meals ready.
Breakfast: Acorn Squash, Mushrooms, Parsnips and Onion Hash with a Hard Boiled Egg.
Lunch: Arugula, olives, marinated red onions, carrots and pork.
This pork is so easy to make and beyond delicious. You can put it on pretty much everything! We just got a pork sholder, seasoned with pink salt, pepper and placed in our Instant Pot for 90 minutes. The meat becomes like butter, it just falls apart and then we shred it, placing it in the broiler for 5-10 minutes to crisp up! We got this simple recipe from NOM NOM PALEO. We didn't have any Whole 30 bacon so we didn't do that part this time, but it was still delicious!
